Traditional Recipe Ingredients

1.4kg Long Acre Round Roast

2 tbsp olive oil

Salt, to taste

Pepper, to taste

4 potatoes, quartered

4 carrots, chopped

2 parsnips, chopped

1 onion, quartered

4 cloves garlic, smashed

2 sprigs rosemary

Method:

  1. Preheat your oven to 165°C.
  2. Season the roast beef with salt and pepper.
  3. Heat the olive oil in a large pan over medium-high heat.
  4. Sear the roast on all sides until browned, about 3-4 minutes per side.
  5. Place the potatoes, carrots, parsnips, onion, garlic, and rosemary in the roasting pan.
  6. Place the roast on top of the vegetables and cook in the oven for 1.5-2 hours, or until the internal temperature reaches 60°C for medium-rare.
  7. Rest the roast for 15 minutes before slicing and serving with the roasted vegetables.

Method:

  1. Preheat your oven to 165°C.
  2. Season the roast beef generously with salt and pepper (if using).
  3. Heat the ghee or beef tallow in a large pan over medium-high heat.
  4. Sear the roast on all sides until browned, about 3-4 minutes per side.
  5. Place the roast in a roasting pan and cook in the oven for 1.5-2 hours, or until the internal temperature reaches 60°C for medium-rare.
  6. Rest the roast for 15 minutes before slicing and serving.
