Traditional Recipe Ingredients
2 Long Acre T-bone steaks
2 tbsp olive oil
Salt, to taste
Pepper, to taste
4 small potatoes, quartered
2 carrots, sliced
1 head of broccoli, cut into florets
1 red onion, sliced
Fresh thyme or rosemary sprigs (optional)

Method:
- Preheat your oven to 200°C.
- Toss the potatoes, carrots, broccoli, and red onion with 1 tbsp olive oil, salt, and pepper. Spread them on a baking sheet.
- Roast the vegetables in the oven for 25-30 minutes, or until tender and golden brown.
- Season the T-bone steaks with salt and pepper.
- Heat the cast iron skillet over medium-high heat and add 1 tbsp olive oil.
- Sear the steaks for 3-4 minutes on each side for medium-rare, or until they reach your desired doneness (55°C for medium-rare).
- Rest the steaks for 5 minutes before serving, alongside the roasted vegetables.

Carnivore Recipe
Ingredients
2 Long Acre T-bone steaks
2 tbsp ghee or beef tallow
Salt and pepper to taste (optional)
2-3 Servings

Method:
- Preheat your cast iron skillet over medium-high heat until it’s very hot.
- Season the T-bone steaks generously with salt and pepper (if using).
- Add the ghee or beef tallow to the skillet.
- Sear the steaks for 3-4 minutes on each side for medium-rare, or until they reach your desired doneness (use a meat thermometer: 130°F for medium-rare).
- Rest the steaks for 5 minutes before serving to let the juices redistribute.
